How to Bake Bajan Sweet Bread

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mix dry ingredients: Combine flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Add coconut and fruit: Stir in grated coconut, raisins, and cherries.
  4. Blend the wet ingredients: In another bowl, whisk together milk, melted butter, almond essence, and vanilla.
  5. Combine and stir: Add wet ingredients to the dry mixture and mix until just combined. No overmixing needed!
  6. Pour and top: Spoon into your loaf pan and sprinkle a little sugar or grated coconut on top. A few cherries on top add a fun, colourful touch.
  7. Bake for 45–55 minutes or until a skewer inserted in the centre comes out clean.
