A Culinary Journey!

It’s been over a year since Jean Jacque has taken the helm as consulting chef at The Crane Restaurants and has since transformed and revamped the menus at D’Onofrio’s Trattoria and L’Azure and will soon head over to The Carriage House.

Jean Jacque, the man behind the change was schooled by the world renowned Le Cordon Bleu Culinary Institute in Paris, France. He has amassed an astounding 25 years in the restaurant business and has worked across continents, channelling inspiration from many of the exotic countries he has worked in, including Switzerland, United Kingdom, Thailand and New York.

Jean Jacque has resided in New York for the past 16 years and currently owns both Le Canard Enchaine a high end French restaurant and The French Kiss Bakery, famous for their amazing Baba Rumm, both located in the upscale Kingston neighbourhood.

Crane blog recently sat down with Jean Jacque to discuss why his changes have made such a difference and what we can expect in the coming months.

With that warm smile that is typical French, JJ as we like to call him sums it up in three words, Exploration, Casual and Relaxed, this he says is the key to building a restaurant brand that people will want to return to over and over again. “We want to take our customers on a culinary journey by utilising classic cuisine, mixed with modern nuances that are hard to ignore.”

He further expressed that patrons can continue to expect fantastic food at competitive prices coupled with memorable experiences. In addition, there are plans to expand the wine selection.

Jean Jacque has stated in no uncertain terms that he plans to make D’Onofrio’s Trattoria the number one Italian restaurant in Barbados and will continue to build on the iconic brand that is L’Azure restaurant.
