Mauby is a drink which is widely consumed in Barbados among locals. Locals typically drink mauby along with lunch or dinner, a small snack or simply to quench their thirst on warm days. There is now mauby syrup available which only requires a person to add water to prepare the drink but traditionally in Barbados, mauby drink was prepared by using the actual mauby bark. Crane Concierge is sharing the recipe for the traditional Mauby recipe for you to get a taste of Barbados:
Ingredients
- 4-5 cups of water
- 10 pieces of mauby bark
- 2 cups sugar
- 1-2 cinnamon sticks depending on size (optional)
- 2 pieces of dried orange peel
- 1/2 nutmeg (optional)
- 3-4 cloves
Directions
Place all ingredients into a saucepan and on a med-high heat and allow it boil. Allow the concentrate to boil for 5 minutes before turning off the stove and covering the pot. Leave the concentrate to steep for around 5 hours.
To prepare a glass of mauby, add 2 cups of water to every 1 cup of concentrate and sweeten with brown sugar. To add an extra kick, add a few drops of Angostura bitters, mixed essence or cinnamon and ice and enjoy!
